Ingredients
Noodles
- 8 oz flat rice noodles
Sauce & Oil
- 2 tbsp vegetable oil
- 3 tbsp low-sodium soy sauce
- 1 tbsp brown sugar
Vegetables
- 1 cup bell peppers, sliced
- 1 cup broccoli florets
- 1 cup carrots, julienned
Protein
- 8 oz boneless chicken or shrimp
Additional
- 4 cloves garlic, minced
Instructions
- Cook Noodles: Boil water in a large pot and cook the flat rice noodles according to the package instructions until they are al dente. Drain well and set aside to prevent sticking.
- Heat Oil and Sauté Garlic: Warm the vegetable oil in a large skillet or wok over medium-high heat until it shimmers. Add the minced garlic and sauté for about one minute until aromatic and lightly golden, releasing its flavor.
- Cook Protein: Add the boneless chicken or shrimp to the skillet and stir-fry until fully cooked. This takes approximately 3-5 minutes for chicken and 2-3 minutes for shrimp, depending on size. Stir frequently to ensure even cooking.
- Add Vegetables: Toss in the sliced bell peppers, broccoli florets, and julienned carrots. Stir-fry together for about two minutes until the vegetables become slightly tender but still retain a crisp texture.
- Combine Noodles and Sauce: Return the cooked rice noodles to the skillet. Pour in the low-sodium soy sauce and sprinkle the brown sugar over the ingredients. Toss everything thoroughly to combine all flavors evenly and heat through for another 1-2 minutes.
- Serve: Once everything is well mixed and piping hot, remove from heat and serve immediately for best taste and texture.
Notes
- If you prefer a spicier dish, add fresh chili or chili flakes when sautéing the garlic.
- Ensure noodles are not overcooked to maintain their chewiness in the stir-fry.
- You can substitute chicken or shrimp with tofu for a vegetarian option.
- Adjust soy sauce and sugar according to your taste preference for saltiness and sweetness.
- Use fresh vegetables for the best texture and flavor; frozen can be used but may release more water.
