Instructions
- Prepare the Rice: Rinse the short-grain rice under cold water until the water runs clear to remove excess starch. Cook the rice with 1¼ cups of water using either a rice cooker or on the stovetop until tender. Meanwhile, combine rice vinegar, sugar, and salt in a small saucepan over low heat and stir until dissolved. Gently fold this mixture into the warm, cooked rice. Let it cool to room temperature before assembling.
- Set Up Your Rolling Station: Wrap a bamboo sushi mat tightly with plastic wrap to prevent sticking. Prepare a small bowl of water mixed with a little rice vinegar nearby; dipping your fingers in this will prevent the rice from sticking while spreading.
- Assemble the Roll: Place a nori sheet shiny side down on the bamboo mat. Spread an even layer of the cooled sushi rice over the nori, leaving about ½ inch of space at the top edge to seal the roll. Flip the nori so the rice faces down on the mat. Along the center, layer imitation crab, avocado slices, cucumber strips, cream cheese strips, and optional jalapeño slices.
- Roll the Sushi: Using your thumbs, lift the edge of the mat closest to you while holding the fillings in place with your fingers. Roll the sushi mat forward carefully but firmly to form a tight cylinder, sealing the edge of the nori to enclose the filling. Use the mat to press and shape the roll evenly.
- Add the Crunch: Brush the top surface of the roll generously with spicy mayo or eel sauce. Sprinkle toasted panko breadcrumbs or French fried onions over the sauce, pressing lightly with the mat to secure the crunchy topping firmly.
- Slice and Serve: With a sharp, dampened knife, slice the sushi roll into eight equal pieces. Arrange on a plate and drizzle extra sauce such as teriyaki glaze if desired. Serve alongside soy sauce, pickled ginger, and wasabi for an authentic sushi experience.
