Instructions

  1. Mix dry ingredients: In a bowl, whisk together the white whole wheat flour, ground cinnamon, cornstarch, baking powder, and salt until evenly combined.
  2. Combine wet ingredients: In a separate bowl, whisk melted butter or coconut oil with pumpkin purée and vanilla extract. Stir in the pure maple syrup ensuring everything is well incorporated.
  3. Form dough and chill: Pour the wet ingredients into the dry mixture and gently combine until just mixed. Avoid overmixing. Cover and chill the dough in the refrigerator for 30 minutes to firm up.
