This Ube Mochi recipe is a deliciously chewy, sweet Filipino dessert made with glutinous rice flour and infused with vibrant ube extract for a unique purple color and flavor. Perfectly baked to create a soft, slightly sticky texture, these mochi bars are an excellent treat for gatherings or everyday snacking.

  • Total Time: 2 hours (including cooling time)
  • Yield: 36 servings

Ingredients

Wet Ingredients

  • ½ cup unsalted butter (melted and allowed to cool slightly)
  • 1½ cups granulated sugar
  • 4 large eggs (room temperature)
  • 2 tbsp ube extract
  • 1 12-oz can evaporated milk
  • 1 14-oz can coconut milk

Dry Ingredients

  • 1 16-oz box Mochiko flour (glutinous rice flour)
  • 2 tsp baking powder

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper and set it aside to prepare for baking.
  2. Mix Butter and Sugar: In a large mixing bowl, stir together the melted butter and granulated sugar until the mixture is well combined and smooth.
  3. Add Eggs: Add the eggs one at a time to the butter and sugar mixture, making sure each egg is fully incorporated before adding the next. This helps create a smooth batter.
  4. Incorporate Ube Extract: Stir in the ube extract until it is evenly distributed throughout the batter, giving it a vibrant purple color and distinct flavor.
  5. Add Dry Ingredients: Gradually add the Mochiko flour and baking powder to the wet ingredients. Stir until the mixture is about 80-90% combined, avoiding overmixing.
  6. Mix in Milks: Pour in the evaporated milk and coconut milk. Stir the batter thoroughly until smooth with no lumps, ensuring an even consistency.
  7. Transfer & Bake: Pour the batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for about 45 minutes or until a toothpick inserted in the center comes out with minimal dry crumbs.
  8. Cool: Remove the mochi from the oven and allow it to cool completely in the pan. Once cooled, slice into bars and serve.

Notes

  • Make sure eggs are at room temperature for better incorporation and a smoother batter.
  • Do not overmix the batter after adding the flour to prevent a dense texture.
  • Use parchment paper to prevent sticking and for easy removal from the pan.
  • The baking time may vary depending on your oven; start checking around 40 minutes.
  • For a more intense ube flavor, additional ube extract or ube powder can be used.
