Ingredients
Bread Base
- 8 slices fresh baguette bread
- 2 tbsp extra virgin olive oil (divided)
Toppings
- 2 medium sized ripe tomatoes, finely chopped
- 3 cloves garlic, minced
- 4 oz goat cheese
- ½ tsp balsamic vinegar
- ¼ cup freshly chopped basil leaves
- Salt & pepper, to taste
- ¼ cup freshly grated Parmesan cheese
Instructions
- Preheat the Oven: Preheat your oven to 400°F (220°C) to prepare for toasting the bread.
- Cut the Bread: Use a heart-shaped cookie cutter to cut each slice of baguette bread into heart shapes. Arrange these heart-shaped slices on a baking tray.
- Brush with Olive Oil: Brush both sides of the bread hearts with extra virgin olive oil to ensure a golden, crispy texture after baking.
- Bake the Bread: Place the baking tray in the preheated oven. Bake the bread hearts for about 10 minutes until they become golden brown and crispy.
- Spread Goat Cheese: Once baked and slightly cooled, spread a generous layer of goat cheese evenly over each toasted heart-shaped bread slice.
- Prepare the Tomato Basil Topping: In a bowl, combine the finely chopped tomatoes, minced garlic, freshly chopped basil, balsamic vinegar, remaining olive oil, salt, and pepper. Mix well to blend the flavors.
- Assemble the Appetizer: Spoon the tomato basil mixture evenly over the goat cheese on each bread heart. Spread lightly so the heart shapes remain visible.
- Add Parmesan Cheese: Finally, grate fresh Parmesan cheese on top of each composed appetizer.
- Serve Immediately: Serve the appetizers immediately to enjoy the contrast of crispy bread, creamy goat cheese, and fresh flavorful topping.
Notes
- Use ripe, juicy tomatoes for the freshest flavor.
- Heart-shaped cutters can be replaced with other shapes as desired.
- To make it extra crispy, you can toast the bread slightly before cutting.
- Feel free to substitute goat cheese with cream cheese or feta if preferred.
- This appetizer is best served immediately to maintain the crispiness of the bread.
