Instructions
- Prepare Pan: Line an 8″ x 4″ loaf pan with parchment paper and set aside for easy removal of the bars later.
- Mix Wet Ingredients: In a medium bowl, combine the pumpkin puree, almond butter, melted coconut oil, maple syrup, and vanilla extract. Stir with a spatula until thoroughly mixed.
- Add Dry Ingredients: Incorporate the vanilla plant-based protein powder, cinnamon, and salt into the wet mixture. The resulting dough should resemble a thick, playdough-like consistency.
- Fold in Mini Chocolate Chips: Gently fold the miniature dark chocolate chips into the dough to distribute them evenly.
- Press Base Into Pan: Firmly press the mixture into the prepared loaf pan to create an even base layer. Place the pan in the freezer to firm up while preparing the chocolate topping.
- Melt Chocolate Topping: Melt the dark chocolate chips slowly in a small saucepan over low heat or in the microwave in 20-second increments. Once melted, stir in the almond butter until smooth.
- Pour Topping: Remove the base from the freezer and pour the chocolate topping evenly over it, smoothing the surface so the topping reaches all edges of the pan.
- Chill Bars: Place the pan in the refrigerator to set the bars. Chill for at least 1 hour, though overnight chilling is recommended for best results.
- Cut Bars: Once set, remove the bars from the pan using the parchment paper and cut into desired sizes. The recipe suggests cutting into 12 bars.
- Store: Keep the bars in an airtight container in the refrigerator to maintain freshness.
