Sauce

Instructions

  1. Cook Pasta: Boil water in a large pot and cook the gluten-free fettuccine according to the package instructions until al dente. Drain and set aside.
  2. Sauté Aromatics: In a heated skillet, add a small amount of water, vegetable broth, or oil to prevent sticking. Add the minced garlic and chopped sun-dried tomatoes and sauté for about 2 minutes, adding more water as needed to keep ingredients from sticking.
  3. Caramelize Flavors: Stir in the Italian seasoning, balsamic vinegar, and tomato paste. Continue cooking for 2 to 3 minutes until the mixture is caramelized and fragrant.
  4. Simmer Sauce: Add the cherry tomatoes and 1 cup of water to the skillet. Cover and cook for 3 to 4 minutes until the cherry tomatoes soften. Then, use a spoon to gently smash the tomatoes to release their juices and create a sauce base.
  5. Finish the Sauce: Stir in the full-fat coconut milk and nutritional yeast. Season with salt and pepper to taste. Let the sauce simmer for 5 to 10 minutes, stirring occasionally, until it thickens to a creamy consistency.
  6. Combine Pasta and Sauce: Add the drained fettuccine into the skillet with the sauce. Toss gently to coat the pasta evenly. Add the baby arugula and mix until it wilts and combines with the pasta and sauce.
