Egg Mixture
- 10 large eggs
- ½ cup yogurt (or dairy-free yogurt)

Vegetables and Cheese
- 2 tablespoons olive oil
- 1 leek (white and light green parts, chopped)
- ½ pound thin asparagus (trimmed and cut into ½-inch pieces)
- 1 cup frozen peas
- 1 cup packed baby spinach

Instructions
- Preheat and Heat Oil: Preheat your oven to 400°F (200°C). Heat 2 tablespoons of olive oil in a 10-inch oven-safe skillet over medium heat to prepare for sautéing the vegetables.
- Sauté Leek: Add the chopped leek (white and light green parts) to the skillet and sauté for 3-4 minutes until softened and fragrant.
- Sauté Asparagus: Add the trimmed and cut asparagus pieces to the skillet and cook for another 1-2 minutes to slightly tenderize them.
- Add Peas and Spinach: Incorporate frozen peas, baby spinach, salt, and pepper into the skillet. Sauté for another 1-2 minutes until the spinach wilts. Then, optionally remove one-third of the vegetable mixture to a plate for a prettier presentation, spreading the remaining vegetables evenly in the pan.
- Whisk Eggs and Yogurt: In a large bowl, whisk together the 10 eggs, ½ cup yogurt, and season with salt and pepper to create a smooth mixture.
- Cook Egg Mixture: Pour the egg mixture over the vegetables in the skillet. Cook on the stovetop over medium heat for 2-3 minutes until the edges start to set.
- Add Remaining Vegetables and Cheese: Top the partially set eggs with the reserved vegetables and dollop evenly with goat cheese.
- Bake the Frittata: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are fully set and the top is lightly golden.
- Garnish and Serve: Remove from the oven and garnish with fresh dill and parsley before slicing and serving warm.
