Ingredients

Vegetables

  • 1/2 large Red onion (cut into 1-inch pieces, layers separated)
  • 2 medium Carrots (sliced thinly)
  • 1 large Red bell pepper (cut into strips)
  • 1 cup Broccoli (cut into medium florets)
  • 1 cup Cauliflower (cut into medium florets)
  • 1 cup Cremini mushrooms (sliced)
  • 1 medium Zucchini (sliced ¼ inch thick)

Other Ingredients

  • 2 tbsp Olive oil
  • 2 tbsp Unsalted butter
  • 2 cloves Garlic (minced)
  • 1/2 tsp Sea salt (to taste)
  • 1/4 tsp Black pepper (to taste)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Heat the oil. Heat olive oil in a large 12-inch skillet with tall sides or sauté pan over medium-high heat until shimmering, to create a hot base for cooking the vegetables.
  2. Sauté carrots and onions. Add the sliced carrots and separated onion layers to the pan. Cook for 5-7 minutes, stirring occasionally but not constantly, to allow them to soften and begin caramelizing.
  3. Add remaining vegetables. Stir in the bell peppers, broccoli, cauliflower, mushrooms, and zucchini. Cook for 6-8 minutes, again stirring occasionally to encourage browning and prevent sogginess. For crisper zucchini, add it during the last 3 minutes of this step. Add more oil if the pan becomes dry.
  4. Add garlic butter. Reduce heat to medium-low, push the veggies to the pan edges creating an open center. Add butter to the center and wait for it to melt. Add minced garlic and sauté for about 1 minute until fragrant and just starting to brown.
  5. Combine and season. Stir all the vegetables together with the garlic butter, remove from heat, and season with sea salt and black pepper to taste. Mix gently to evenly coat the veggies with melted butter.
  6. Garnish and serve. Optionally sprinkle fresh parsley on top for brightness and serve immediately while warm.

Notes

  • For crisper zucchini, add it in the last 3 minutes of cooking with the other vegetables.
  • Stirring occasionally, rather than constantly, helps vegetables brown and develop flavor.
  • Use fresh garlic for best flavor; avoid overcooking to prevent bitterness.
