A delicious and hearty Veggie White Lasagna featuring layers of sautéed vegetables, creamy ricotta and béchamel sauce, and a blend of mozzarella and Parmesan cheeses. This vegetarian dish is baked to golden perfection and garnished with fresh basil, making it a perfect comforting meal for any occasion.

  • Total Time: 1 hour 15 minutes
  • Yield: 4 servings

Ingredients

Lasagna Components

  • 9 pieces lasagna noodles (Cook according to package instructions.)
  • 3 cups béchamel sauce (Store-bought or homemade.)
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1/2 cup fresh basil, chopped (Optional for garnish.)

Sautéed Vegetables

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 piece bell pepper, chopped
  • 1 cup spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 teaspoon Italian seasoning
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) to prepare for baking the lasagna.
  2. Cook the noodles: Boil the lasagna noodles according to package instructions until al dente. Drain them and set aside carefully to prevent sticking.
  3. Sauté aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they become translucent, about 3 minutes, releasing their fragrance and flavor.
  4. Cook vegetables: Add the diced zucchini, chopped bell pepper, chopped spinach, and sliced mushrooms to the pot. Stir in Italian seasoning and season with salt and pepper to taste. Cook the vegetables until tender, approximately 5 to 7 minutes, stirring occasionally.
  5. Prepare cheese mixture: In a mixing bowl, combine ricotta cheese, 1 cup of shredded mozzarella, and 1/2 cup of grated Parmesan cheese. Mix thoroughly to create a creamy cheese blend for layering.
  6. Layer the lasagna – first layer: Spread a layer of béchamel sauce evenly on the bottom of a 9×13 inch baking dish. Lay 3 lasagna noodles over the sauce. Spread half of the ricotta cheese mixture over the noodles, then layer half of the sautéed vegetables, followed by one-third of the remaining béchamel sauce.
  7. Layer the lasagna – second layer: Add another 3 lasagna noodles on top. Spread the remaining ricotta cheese mixture, then the remaining sautéed vegetables, and pour another one-third of the béchamel sauce over the top.
  8. Layer the lasagna – final layer: Place the last 3 lasagna noodles on top. Pour the remaining béchamel sauce over, and sprinkle evenly with the leftover shredded mozzarella and grated Parmesan cheese.
  9. Bake covered: Cover the baking dish tightly with foil and bake in the preheated oven for 30 minutes. This helps the ingredients meld together while retaining moisture.
  10. Bake uncovered: Remove the foil and continue baking for an additional 15 minutes or until the cheese topping is golden and bubbling, indicating the lasagna is cooked through.
  11. Cool and garnish: Allow the lasagna to cool for about 10 minutes before slicing to help it set. Garnish with freshly chopped basil before serving for an aromatic finish.

Notes

  • You can use store-bought béchamel sauce for convenience or make your own for a richer flavor.
  • Feel free to substitute or add other vegetables like eggplant or carrots according to preference.
  • Ensure noodles are cooked al dente to prevent over-softening during baking.
  • The resting time is important to allow clean slices when serving.
  • This lasagna freezes well; cool completely before freezing in portions.
  • For a vegan version, substitute cheese and béchamel with plant-based alternatives.
