Ingredients
Fruit Base
- 1 (20 oz) can crushed pineapple with juice
- 6 oz pineapple juice
Cream Mixture
- 4 oz heavy whipping cream
- 1 teaspoon vanilla extract (optional)
Equipment
- Popsicle molds
Instructions
- Blend Pineapple: Combine the crushed pineapple along with its juice and the additional pineapple juice in a blender. Blend on low speed until the mixture is fully incorporated and smooth.
- Add Cream and Flavor: Add the heavy whipping cream and optional vanilla extract to the blender. Pulse the mixture just until well mixed. For a frothier texture, increase blending time to achieve a light whipped consistency.
- Taste and Adjust: Taste the mixture and add additional heavy whipping cream if you prefer a creamier flavor and texture. Blend briefly to incorporate any additions.
- Freeze in Molds: Pour the mixture evenly into popsicle molds. Freeze for at least five hours or preferably overnight until completely solid.
Notes
- For a dairy-free alternative, use coconut cream instead of heavy whipping cream.
- If you prefer a less creamy texture, reduce the amount of heavy cream or omit it altogether.
- Adding a splash of lime juice can enhance the pineapple flavor with a zesty brightness.
- To easily remove popsicles from molds, run warm water over the outside of the molds for a few seconds before pulling out.
- Vanilla extract is optional but adds a subtle depth and sweetness to the popsicles.
