Ingredients
For the Pinwheels
- 3 10″ tortillas
- 8 oz. whipped cream cheese
- 4 oz. feta, crumbled
- 1/4 tsp. salt
- 1/2 cup walnuts
- 2/3 cup dried cranberries
- 1/2 cup green onions, chopped
Instructions
- Prepare the whipped feta mixture: In a food processor, combine the whipped cream cheese, crumbled feta, and salt. Blend until smooth and creamy. Remove the mixture from the processor bowl.
- Fold in nuts and fruits: Gently fold the walnuts, dried cranberries, and chopped green onions into the whipped cheese mixture to retain texture and flavor.
- Assemble the pinwheels: Spread one-third of the whipped feta mixture evenly over each tortilla. Roll each tortilla tightly into a log shape.
- Chill the rolls: Refrigerate the rolled tortillas for at least 1 hour and up to 12 hours to allow flavors to meld and make slicing easier.
- Slice and serve: Remove the chilled rolls from the refrigerator and slice into one-inch thick pinwheels. Serve immediately as a savory and sweet appetizer or snack.
Notes
- Refrigeration time can be adjusted between 1 to 12 hours depending on schedule; longer chilling enhances flavor merging.
- Use walnuts toasted lightly for added crunch and deeper flavor.
- Substitute dried cranberries with dried cherries or raisins for variation.
- To make it gluten-free, opt for gluten-free tortillas.
- Keep pinwheels refrigerated and consume within 24 hours for best freshness.
