A refreshing and healthy Protein Yogurt Jello dessert combining sugar-free strawberry jello, creamy Greek yogurt, and low-carb vanilla protein powder. This easy no-cook recipe is perfect for a high-protein, low-carb snack or dessert that sets in just a few hours in the fridge.

  • Total Time: 3 hours 15 minutes
  • Yield: 4 servings

Ingredients

Jello Mixture

  • 2 tbsp Strawberry Sugar Free Jello Mix
  • 1 1/4 cup boiling hot water

Protein Yogurt Mixture

  • 1 cup plain Greek yogurt (0% fat)
  • 1 scoop low carb vanilla protein powder

Optional Toppings

  • Fresh strawberry slices
  • Whipped cream

Instructions

  1. Prepare Jello Base: Put the sugar-free jello powder into a large bowl to prepare for dissolving.
  2. Dissolve Jello Powder: Add 1 1/4 cup boiling hot water to the bowl and stir thoroughly until all the powder has fully dissolved and the mixture is smooth.
  3. Cool Jello Mixture: Let the jello mixture cool down to room temperature naturally; avoid putting it into the fridge at this stage to ensure proper mixing later.
  4. Add Yogurt and Protein: Once cooled, add the Greek yogurt and low carb vanilla protein powder to the jello mixture. Stir well until all ingredients are combined evenly.
  5. Set the Jello: Cover the bowl and place it in the refrigerator. Allow it to chill and fully set for 2 to 3 hours until firm.
  6. Serve: Once set, serve the yogurt protein jello topped with fresh strawberry slices and whipped cream for an added touch of flavor and decoration.

Notes

  • Ensure the jello mixture is completely cooled before adding yogurt to prevent curdling.
  • You can substitute the vanilla protein powder with any other flavor according to preference.
  • Use sugar-free jello mix to keep this dessert low-carb and diabetic-friendly.
  • For best texture, use thick Greek yogurt with 0% fat.
  • Refrigerate the mixture uncovered initially to avoid condensation, then cover once it starts setting.
