Ingredients

Cheese Balls

  • 2 cups (packed) roughly chopped soft cooked broccoli (well drained) (~400g/14 oz raw broccoli)
  • 1 cup panko breadcrumbs
  • 2 large eggs (~55g/2oz each in-shell)
  • 3/4 cup shredded cheese (Cheddar, Colby or Tasty cheese)
  • 2 green onion stems, finely sliced
  • 2 cloves garlic, finely minced
  • 1/4 tsp cooking salt / kosher salt (halve for table salt, increase by 50% for flakes)
  • Black pepper, to taste
  • Olive oil spray

Lemon Yogurt Sauce

  • 1 batch Lemon Yogurt Sauce (or plain yogurt as alternative)

Instructions

  1. Preheat oven and prepare tray: Set your oven to 200°C/400°F (180°C fan forced) and line a baking tray with parchment paper to prevent sticking and for easy cleanup.
  2. Mix ingredients: In a large bowl, combine the chopped, well-drained broccoli, panko breadcrumbs, eggs, shredded cheese, sliced green onions, minced garlic, salt, and black pepper. Mash the broccoli while mixing to create a cohesive mixture similar to how you would prepare mince meat.
  3. Form cheese balls: Using a heaped tablespoon, scoop portions of the mixture and press firmly to compact. Flick the mixture into your hand and roll it into a ball shape. Place each ball onto the lined baking tray. Continue until all the mixture is used, yielding about 15 to 18 cheese balls.
  4. Spray and bake: Lightly spray the formed cheese balls with olive oil to help achieve a golden, crisp exterior. Bake in the preheated oven for approximately 25 minutes or until the surface is golden and slightly crisp.
  5. Serve: Once baked, serve your cheese balls warm with the Lemon Yogurt Sauce or your favorite ketchup for a delightful snack or appetizer.

  • Ensure the cooked broccoli is very well drained to prevent soggy cheese balls.
